I promised my wife I'd cook a banana pie, but to be honest I was lazy to do so. So I decided to try to make it slightly different and at the same time to try something I never tried before: a meringue pie. Usually it is done with lemon pie but I wanted to make something different, and since banana are cheap and easy to find in Indonesia (and also they taste much better than the one you may buy in Europe) I decided to use the local ingredients to cook a brand new dessert (at least I never heard of it before).

A simple and delicious recipe to impress your teatime guests.
Ingredients:
A 20 cm diameter pie mold
Dough (enough for two 20 cm diameter pies)
100 g coconut oil (soft not liquid)
140 g sugar
280 g flour
1 pinch salt
Filling
350 g banana (about 9 small banana or 4-5 big ones, don't hesitate to take very ripe ones)
75 g flour
3 egg yolks
140 g sugar
100 ml coconut milk
Meringue (enough for 2 pies or one heavy loaded one)
3 eggs white
75 g sugar
Preparation:
- Preheat your oven at 180 °C convection mode and mix one egg with 140 g of sugar and a pinch of salt until you obtain an homogeneous blend.
- put 280 g of flour in a big bowl and dig a pit in the middle of it where you'll put your egg / sugar mix and your coconut oil. Mix with your hands until your dough is homogeneous.
- Use a rolling pin to spread your dough and cut it so it fit in your pie mold. CAREFUL, your dough might be quite sticky so spread it directly on some parchment paper and flour your rolling pin to avoid that. Also, use beans atop of your pie dough to keep it from rising.
- Prick your dough with a fork and oven it for 10 mn. In the mean time blend the ingredients for the filling together, don't worry if it looks too liquid.
- Once your dough is precooked, pour your filling inside and reoven the pie, this time for 30 mn.
- In the mean time prepare the meringue by beating the eggs white. Once you obtain a very firm consistency add the 75 g of sugar and beat again for a minute.
- Take your pie out of the oven once the 30 mn are over (the filling should have solidify) and spread your meringue on top of it before cooking once again the pie in the oven, this time on grill mode until the top starts to turn slightly brownish; it shouldn't take long so watch your pie carefully.
- Serve on its own or with a ball of chocolate ice cream

I was thinking about making a chocolate meringue banana pie and I might do so in the future.
