Tom Yum Goong (sour and spicy shrimp soup)

I first discovered the tom yum when I started living in Thailand, and to be honest, I was never really fond of the dish myself even if I didn't dislike it either; I was rather a Thai curry lover. Anyway, even if I am not crazy about is, my wife who cannot stand sour dishes is fond of it... As Tom Yum is quite a sour meal, I never quite understood how comes she loves it so much.



So to please her, I cooked one,. And of course, as usual, I had to arrange the recipe to match what I could possibly find where I live, and here is the recipe I used.

Probably one of  the most famous Thai meal if not the most famous: a sour and spicy soup with mushrooms and shrimps. Yummy. 

Ingredients:

For 2 people
200 g shimps with their shells
200 g oyster mushrooms
3 small onions
1 carrot (optional)
1 tomato
2 garlic cloves
3 strong chilies (to adjust depending on the wanted spiciness)
1 cm galangal
3 kakkir lime leaves
1 lemongrass
1 lime
3 tablespoon oyster sauce
2 tablespoons soy sauce
3 tablespoon coconut milk
1 teaspoon sugar


Preparation:

    Step 2
  1. Crush your lemongrass and the chilies with a mortar, juice your lime, tear your kaffir lime leaves, chop your galangal and your garlic.

  2. Boil about 1/2 l of water and add the lemongrass, the garlic, the chilies and the galangal. Let it boil for about 10 mn.

  3. Add the shrimps with their head and shell and the mushrooms. Chop the carrot, the onions and the tomato and add them too. Boil for about 5 mn

  4. Step 4
  5. Season with the oyster sauce, the sugar and the soy sauce. add to taste. Keep boiling for a couple of minutes.

  6. Add then the lime juice and the coconut milk. Stir a bit and serve immediately.

  7. Serve with rice on the side or alone.
Variations:
Depending on how sour you like your tom yum, you shall add more or less lime juice.
You may use other meats / seafood in your tom yum instead of shrimps.
