Cumi sos Padang (Squid in Padang sauce)

Once again it's gonna be an Indonesian recipe. I know there are quite a lot of them (French ones also) but as I live in the country it can't really be helped; and for a change I won't have to replace 50% of the recipe. But don't worry, I'll make sure to keep some variety on my blog to satisfy all kinds of palace.



So today's recipe comes from Sumatra Barat (again) which is famous for its cuisine, and is the birthplace of the rendang that I published only a few days ago. This is a dish I am cooking quite often because it is quite easy and gives a nice change compared to the fried chicken that seems to be the most eaten thing around here.

A good spicy, saucy Indonesian seafood meal, careful with the chilies.

Ingredients:

For 2 people
250 g squid
1 tomato
4 small red onions
1 lemongrass
1 garlic clove
3 tablespoons tomato sauce
2 tablespoons chili sauce (sambal pedas)
1 teaspoon galangal paste
1 teaspoon ginger paste
3 kaffir lime leaves
400 ml water
chili paste (to taste)


Preparation:

    Step 2
  1. Chop your onions and garlic and blend your tomato with a bit of water. 

  2. chop your squids, remember to remove the ink sacks and the cuttlebone. You can eventually let it marinate a bit in some lemon juice if the fishy smell bothers you.

  3. Step 4
  4. Fry the onion and garlic until coloration and add the pastes and the lemongrass. Keep frying for 2 mn while stirring.

  5. Add the water, the various sauces, the blended tomato and the squid. Cook on high heat until the sauce thicken (10-15 mn give or take).

  6. Serve with rice and kerupuk sambal (spicy crisps).
