Kerala fish curry

Few days ago I posted a Chinese recipe, saying that I didn't post any Chinese recipe before and that it was a mistake on my behalf. Well then, it appears I also neglected India, despite the fact that I love Indian cuisine. Seriously, when I was living in Kuala Lumpur the best food there wasn't local, it was Indian. And the more I think about it, the more I regret this city considering where I am now. I won't go as far as saying I liked the place but clearly it had its perks. Anyway, here is a recipe you probably won't find in any Indian restaurants outside of India, and it is a shame because it really is delicious if you are into slightly spicy cuisine. If you have some fish and dunno what to cook with it, this recipe will definitely enchant your palace.

An amazing, slightly spicy fish curry from the south of India; full of spices and flavor, yummy!

Ingredients:

For 2 people
2 white fish filet
2 garlic cloves
4 small red onions
3 big tomatoes
250 ml coconut milk
2 tablespoons soy sauce
1 tablespoon chili paste
1 teaspoon mustard seeds
1 teaspoon coriander
1 teaspoon turmeric
1 teaspoon dried basil
1 teaspoon ginger powder
1 lemongrass
water
oil


Preparation:

    Step 2
  1. Mince your onion and garlic cloves, dice your tomatoes and crush the lemongrass so it release its flavor.

  2.  In a bit of oil fry your mustard seeds to coloration. Then add the minced onions, the garlic and the lemongrass; keep frying until the onion starts to brown.

  3. Add the dices tomatoes, the chili paste and all the other spices; cover with water and let it cook on low heat until the tomatoes start to blend into a sauce.

  4. Step 4
  5. Add the fish filet and the coconut milk and keep cooking on middle heat for about 15 mn, the result should be a thickish orange sauce.

  6. Add in the soy sauce to taste.

  7. Serve with rice.
