French fries

I remember perfectly that day, when some U.S. politician renamed them into "freedom fries", gave me quite a laugh. First because it is a stupid way to retaliate against a country who doesn't agree to your views, second because the term "French fries" is an American thing. I am French and I always believed the so called "French fries" where actually from Belgium after looking it up, it appears that the origin ain't clear and that the French fries are either indeed French, or Belgian; so until it is clarify we'll give the credit to both countries even if, I have to admit, the fries served in Belgium are better than the ones served in France.



You may ask yourself:"why should I bother cooking fries while I can just buy frozen ones?". To that question I have only one answer: "Because you may cook them exactly the way you like them." you may use different types of potatoes, different cutting and frying them just the way you like; plus it is not that much work either.

Probably the most famous French snack, cooked and loved all around the world.

Ingredients:

For 2 people
2 big potatoes (or 4 average size potatoes)
Oil
Salt



Preparation:

    Step 1 
  1. Peel your potatoes and chop them into long sticks, you may either cut them very thin (like Mc Donald's fries) or much larger to your liking.

  2. Heat you oil to about 140°C and plunge your fries in the oil (if you don't have any thermometer just use high heat until it boils and then leave it on low heat. Cook for about 10-15 mn, your fries must be soft but not colored yet.

  3. Step 1
  4. Remove the fries from the oil and let them drain for about 10-20 mn. Once done, put them back in the oil, this time at 180°C (high heat) until they start getting a gold brownish color.

  5. Drain them once again for a minute before adding salt and serve them right away.

Variations:
You may add some seasoning on the fries like chilli powder, garlic salt, etc.
You may use sweet potatoes instead of the potatoes, choose wisely your type as some sweet potatoes are very sweet and other aren't so much.

Preserving:
It is possible to freeze the fries after draining them for the first time for a later use.
