Papillotes de poisson aux petits légumes (Fish and vegetables steamed in tinfoil wrapping)

When you live in Indonesia, you quickly understand why the first cause of mortality in the country is diabetes. They put oil and sugar everywhere and even if they do have some very nice food, I don't recall any food that you could call "diet friendly". I mean... even if I can't think of one, they must have some... right?

Everything good in life is either illegal, immoral or fattening (one of the Murphy's law). I find that sentence 100% true but even so, sometimes (just sometimes) all this fat makes you crave to eat something healthy; something that you know is good for your body and this is exactly the goal of the recipe today, but when I made it, I also wanted this recipe to taste good. I don't mind eating diet food but not to the cost of the taste.


So I came up with an Asian version of one of the healthiest food that I remembered eating without reluctance which are fish papillotes. I don't know if there is an English word for it or if it is the English word. Anyway, papillotes are basically a way to present and cook food that uses tin foil (or other) to wrap raw food (usually vegetables and fish) and the said papillotes are then steamed. It usually end up looking like Christmas crackers. So this method uses one of the healthiest (if not the healthiest) cooking technique and inside, you find a meat or fish poor in fat with vegetables.

Wanna eat some nice meal without blowing your diet up? Try the papillotes; a great way to eat healthy without losing the pleasure of taste.

Ingredients:

2 people
2 sheets of tinfoil
2 fish fillets (preferably white fish)
30 g pumpkin
30 g cabbage
30 beansprouts
1 tomato
1 onion
1 spring onion
1 Carrot
1 garlic clove
2 teaspoons soy sauce
2 teaspoons olive oil
1 lime
1 teaspoon of fennel seeds


Preparation: 

    Step 1 and 2
  1. Chop your pumpkin and your carrot into very thin sticks (about the width of Fries in McDonalds (or thinner).

  2. Chop the cabbage, onion, spring onion, garlic and tomato into small pieces.

  3. Spread the 2 tinfoil sheets and divide equally the vegetables (except the garlic) and place them in the center of the tinfoil sheets.

  4. Step 6 
  5. On top of the veggies, place the fish fillets.

  6. Add the garlic on top of the fillets.

  7. Now add the olive oil (1 teaspoon per papillote), the soy sauce (same), squeeze a quarter of the lime above the mixture and add on top the fennel seeds.

  9. Roll the tinfoil and close it, the result should look like a Christmas cracker (roughly).

  10. Place the papillotes in a steamer (or a pressure cooker with a steaming basket) and steam the papillotes for 15-20 mn.

  11. Serve with rice.


Variations:
You may use any kind of vegetable in your preparation.
You may replace fennel by other herbs, thyme for instance could work very well, rosemary would also be a safe bet and I'd be curious to see what the result would be like with sage or lemongrass.

Suggestions:
If you are not Muslim or too concerned about your diet, a Riesling or pinot blanc would work very well with the meal; if you have access to it aim for the "grand cru" label for the good stuff if you don't know anything about wine.
