I bought a pineapple a couple of days ago and decided to open it today and... started to turn bad and ferment a little... still edible but not enjoyable... lets make a cake of it!
That's right, making cakes out of slightly overripe fruits is a good way to avoid trowing them (of course, if it is really rotten, you can forget about it, the important word here is "slightly"). It is also nice to recycle fruits into something other than jam that will be stored for ages because you already got too many jars of it. If you fruit is not too ripe, don't worry, the recipe will still work fine.
I first came up with that recipe when experimenting. I wanted to cook a cake that would be different from the ones I usually cook. So I started by adding pieces of pineapple in my regular cake dough but it didn't work out the way I expected but since my wife liked it anyway. Therefore, she pressured me into retrying. It didn't take long until I caved in and did as she wanted; and she was right (she always is) about forcing me to retry. The second try with blended pineapple instead of the pineapples chunks was delicious and I am going to show you how to cook it.

An original and exotic recipe for your tea time.
Ingredients:
1/2 Pineapple
4 eggs
200 g sugar
200 g coconut oil (or butter)
250 g flour
100 ml coconut milk (or regular milk)
10 g yeast
salt
Preparation:
- Separate the eggs whites and yolks and beat the eggs white with a pinch of salt. This step is not mandatory but it will make your cake lighter.
- Chop your pineapple into bites and add the to a blender with the coconut milk (squeeze the pineapple skin for more juice). Blend until the content of the blender is completely liquid.
- Melt the coconut oil and mix it with the sugar and the eggs yolks. Mix. MAKE SURE that your oil is not too hot otherwise it will cook the yolks and ruin the cake.
- Add the pineapple / coconut milk mixture to the sugar and coconut oil. Mix.
- Add the flour and the yeast. Mix.
- Add the eggs white. Mix.
- Pour the dough in a cake mold in silicone. If you don't have a silicone cake mold, use parchment paper to cover your cake mold. If you don't have parchment paper,use tinfoil.
If you don't have any tinfoil please move out of whatever desert you're in. More seriously, this is a very important step as without this you'll have a very hard time to remove your cake from the mold once it is cooked.Step 8 - Place your cake in the oven, on the lower position, and cook it at 180°C on convection mode for about 1 h. The top should turn brownish.
- Remove from the mold and let it rest a bit until it cools down.

Variations:
You may add a teaspoon of cinnamon to enhance the taste.
You may use the recipe's base with other fruits, however don't forget to adapt the recipe.
Ideas:
I think this cake is a bit too heavy and I am working on a lighter version of it as this one is extremely rich in calories.
Decoration:
You may decorate with candied pineapple on top of some frosting made of icing sugar and some pineapple juice.
You may add a teaspoon of cinnamon to enhance the taste.
