Banana cake

It's been a while I haven't write anything here, with the corona virus and all I got quite busy and didn't take time to write on my blog. So, this time I'll give one of my favorite recipe: the banana cake. It is not quite the banana bread you could try in Thailand; I don't want to appear pretentious but this is clearly (in my opinion) much better than the banana cake.



Since I live in Indonesia, and in addition in the countryside of the country, the kind of food I find the most easily on the local markets are fruits. And they do have good fruits. The most present fruit here is the banana and that is perfect as it is a great fruit to bake. I already made some banana walnut muffins, some chocolate banana mini-muffins, a banana meringue pie and today a banana cake and I am pretty sure there will be plenty of other recipes involving banana. Price: Cheap

Simple, delicious, cheap and quite light for a cake. What else could you ask for?

Ingredients:

For 6-8 people
4 big bananas (or 8 small ones)
200 g flour
150 g sugar
100 ml coconut milk (or regular milk)
50 g coconut oil (melted) (or butter)
1 egg
1 tablespoon yeast
1 teaspoon cinnamon


Preparation:

    Step 1
  1. Preheat your oven at 210 °C. Mash your banana (you may use a blender or food processor to do so but a fork works fine too) and put aside.

  2. Mix the egg, the sugar, the coconut milk and the coconut oil together in an homogeneous blend. CAREFUL, do not add the coconut oil while it is still burning hot, you will otherwise cook the egg which will ruin your cake.

  3. Add the mashed banana and mix again, I advi se to mix it with a hand mixer to avoid leaving too big chunks of banana intact.

  5. Add the flour and the yeast and blend once again.

  6. Pour your dough in a cake mold covered in parchment paper or some silicone sheet if your mold is not anti adhesive.

  7. Oven your cake at 210 °C convection mode for about 40mn.

Variations:
Different bananas will give you different tastes, and of course, the better the bananas, the better your cake will be.
