Tomato green beans

Here is a perfect example of some student food; it's cheap, filling and healthy in addition. If I am to be perfectly honest, even if I say that this is student food, I don't remember cooking it as a student. main cause would probably be that I rather enjoyed eating rice based, or pasta based meal rather than green veggies; I was not really into canned food and ready-to-eat meals, and I was not rich enough to eat out every single day. But still I tend not to eat healthy, I never really have as I never really enjoyed eating vegetables, or maybe because I enjoyed too much unhealthy foods like chocolates and such. But there are a few vegetables based dishes that I do enjoy and this one in particular brings back some memories as it was often cooked by my mother. I remember perfectly because it took her years to actually find out the trick to cook it properly. And as I was cooking it I felt that, despite its simplicity, some people might want to try it out.

A great meal that can be used as accompaniment for any meats and fish or just be eaten on its own.

Ingredients:

For 1 person
1 handful of green beans
1 tomato
1 garlic clove
1-2 onions
salt
pepper
butter



Preparation:

    Step 1 
  1. Wash and remove both extremities of the green beans.

  2. Steam the green beans in a steamer or in the basket of a pressure cooker for 30 mn minimum (I do it for 1 h to make sure they'll be tender).

  3. Chop the tomato, onion and garlic, then, in an anti-adhesive deep pan (you may use a regular pan or wok but the result will not be as good), melt a bit of butter and fry the garlic and onions until they get colored.

  4. Step 2
  5. Add the green beans and chopped tomato, cover and slow cook them until the green beans start to get slightly fried and the tomato starts to melt.

  6. Add salt and pepper and serve right away.


Variations:
This meal is usually made with fried smoked "lardon" (a bacon chopped in small pieces) in addition of the butter for a more flavorful meal but then it won't be suitable to vegetarian nor halal diets.
